    Prep Time 10 minutes mins

    Cook Time 10 minutes mins

    Total Time 20 minutes mins

    Ingredients

    • 40 Saltine Crackers (about 1-1/2 sleeves)
    • 2 sticks (16 tablespoons) butter
    • 1 cup light brown sugar
    • 2 bags (12-ounces each) white chocolate chips, chopped
    • 1 tablespoon vegetable oil
    • 1 bag (5-ounces) dried cranberries

    Instructions

    • Preheat oven to 400.

    • Line a jelly roll pan with aluminum foil and grease with cooking spray.

    • Arrange the saltines, one next to another, in a single layer; set aside.

    • In a small saucepan combine butter and light brown sugar; cook over medium heat, stirring frequently, until butter is melted.

    • Increase heat to medium-high and bring to a boil; continue to cook, stirring frequently, until it turns a caramel color; about 1 minute.

    • Remove from heat and pour over the crackers.

    • The crackers will start to move around; use a rubber spatula to set them back in place.

    • Bake in the oven for 4 to 5 minutes, or until mixture is bubbly.

    • In the meantime, set up a double boiler and combine chopped chocolate chips and vegetable oil in the top bowl.

    • Melt the chips, stirring constantly, until most of it has melted but remove from heat while a few lumps are still present. The chocolate will continue to melt while you continue to stir it.

    • Remove crackers from oven.

    • Pour HALF of the melted chocolate over the crackers and smooth it out with a knife; let stand 1 minute.

    • Slowly pour the rest of the melted chocolate and smooth it out again using a knife or an offset spatula.

    • Add dried cranberries on top.

    • Place in the freezer for 20 minutes, or until cold.

    • Break up into pieces.

    FAQs

Why is my cracker toffee chewy? ›

The caramel topping needs to get to the hard-crack stage or it will be chewy. This means you may have to bake it a little longer or adjust your oven temperature slightly (every oven is different). I insist on a candy thermometer.

What is Christmas crack candy made of? ›

It is a type of candy made with saltine crackers coated in toffee and topped with chocolate. It is one of the easiest methods of making candy because you don't need a candy thermometer or exact measurements. You just need to cook the toffee long enough for it to set.

How to make chocolate stick to toffee? ›

Why isn't my chocolate topping sticking to the toffee? The chocolate might not adhere well if the toffee surface is too oily or if it has cooled down too much. Try adding the chocolate chips while the toffee is still warm, and ensure the toffee surface is dry.

Why do you put butter in toffee? ›

Butter is added in the final stages to add flavor and smoothness and inhibit large crystal formation. Use unsalted butter so you can add a small amount of salt (¼ teaspoon per stick of butter) to the sugar/liquid mixture.

Why did my toffee turn out grainy? ›

As the toffee cools and the molten sugar crystals become solid again, they are attracted to the 'seed' forming new lumps of tiny crystals – hence the grainy texture. This can also happen if the toffee is stirred, or agitated, after it has begun to boil or on cooling (as happened with this pink-tinted toffee).

What explosives are in Christmas crackers? ›

The bright wrapping of the Christmas cracker contains a cardboard tube. Attached to the side of the tube inside the cracker is a strip of paper. This paper has been treated with a tiny amount of gunpowder – an explosive mixture of potassium nitrate, charcoal and sulphur.

What is toffee made of? ›

Toffee is a confection made by caramelizing sugar or molasses (creating inverted sugar) along with butter, and occasionally flour. The mixture is heated until its temperature reaches the hard crack stage of 149 to 154 °C (300 to 310 °F). While being prepared, toffee is sometimes mixed with nuts or raisins.

How many crackers are in saltines? ›

A sleeve of saltine crackers typically contains around 40 to 50 crackers.

Why do saltines have 13 holes? ›

Crackers are not meant to rise like sourdough and baguettes, though. For cracker dough to bake to a perfect crisp, it needs to release the steam. Basically, perforating crackers with holes (also called docking) helps release steam from the dough when it bakes to keep the crackers flat.

Why do you eat saltines when nauseous? ›

Saltine crackers have been the family prescription for upset stomach and nausea for many years as they soak up the acid that sits in an empty stomach, which is often the source of the irritation. Additionally, saltine crackers prevent acid from being released in the stomach.

Is peanut butter and saltines a good snack? ›

Pair saltine crackers with low sodium foods that are a good source of dietary fat, fiber, and protein to make healthy and nutritious snacks that will keep you feeling fuller longer. Some foods you can pair saltine crackers with include: Nut butter: peanut, almond, cashew.

Why do you not stir toffee? ›

NOTE:[i] Most recipes recommend constant stirring from start to finish to prevent butter and sugar separation. Constant stirring will not hurt the mixture, but I have found it is unnecessary. You will stir the mixture a little as it cooks.

Why is my homemade toffee sticky? ›

Question for you - How quickly did you boil the candy initially? Long slow boils cause more sugar inversion, inverted sugar is hygroscopic (attracts water) and will make your candy sticky.

What gives toffee its flavor? ›

Just like caramel, the brown sugar molecules break down and, thanks to the addition of molasses in the sugar, caramelize into a richer, deeper flavor than classic caramel. To create a sauce, topping, or candy, additional ingredients like vanilla, salt, and cream can be added once caramelization has occurred.

What does overcooked toffee look like? ›

But overcooked toffee will be just slightly crunchier (almost unrecognizably). So, always err on the side of over-cooking! Tip 2 explains how to do so! In order to avoid your chocolate turning white, you'll want to let it set in a room temperature spot without exposure to any drafts.

Should toffee be hard or soft? ›

Toffee is a hard candy made by cooking a sugar syrup with butter to the hard crack stage, 300–310°F (149–154°C), and then pouring it out to cool. It can have inclusions or not, and it can be made either very dense and hard or can be lightened by adding baking soda when the candy is almost done cooking .

Is chewy toffee the same as caramel? ›

This overview aims to clarify their differences. While they share a golden-brown colour and a sugary base, toffee and caramel are distinct in ingredients, preparation, and texture. Toffee, known for its hard and brittle nature, contrasts with caramel's soft, chewy consistency.
