As if it hasn’t become really apparent over the years, I get bored really easily. Not like, sitting on the couch flipping channels bored but I get boredofthings quickly. Hobbies, books, tv shows, etc, etc, etc.
So on our epic roadtrip earlier this summer, it’s really no surprise that by hour 4 I was done with my playlist. I hated every song. I never wanted to hear them again. I’m still kind of hating it a month later.
I’d been saving podcasts, though, because I know myself and knew I’d get tired of music. I started marathoning Dave Ramsey, Elise Gets Crafty, and Balanced Bites.
My children hated every minute of it.
I really got intoBalanced Bites which is a paleo/overall health podcast and after many, many hours of listening, I got really excited about paleo living. I was all YES! WHEN WE GET HOME, EVERYONE’S GOING PALEO! THE KIDS, THE DOGS, EVERYONE!
This lasted about 5 minutes once we actually got home but I discovered a really awesome waffle recipe so… I call it a win.
I dig what coconut flour does for recipes.Especially these waffles. They’re really light and fluffy and the coconut flour adds just a little extra texture and a very slight coconut flavor. Pluscoconut flour is high in protein, fiber, and good fats!

Yield: 6 waffles
Coconut Flour Waffles
Cook Time30 minutes

Ingredients
- 4 eggs, separated
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- ⅛ teaspoon cinnamon
- ⅓ cup almond milk or coconut milk
- ¼ cup sifted coconut flour
Instructions
- Put egg whites in a large mixing bowl and beat to stiff peaks. Set aside.
- In a separate mixing bowl, stir together egg yolks, melted coconut oil, vanilla, baking soda, salt, cinnamon, almond milk, and sifted coconut flour. Stir until almost all lumps are gone. Gently fold in beaten egg whites.
- Cook according to waffle maker's instructions. Mine took about ½ a cup of batter per waffle and I ended up with 3 waffles.

My waffles were too dry. Broke, wouldn’t come out of the waffle maker as one piece. What did I mess up on?

These were great! I added a tablespoon of almond butter and the taste improved so much! Next time I will add healthy Nutella to see how it goes.

I’m trying low carb and these looked very good. I am a carb junky and need to find yummy treat replacements that aren’t “diet” or “cardboard” tasting. I tried them without substituting anything, used coconut milk, and they were very good and I will be making them again. Thanks for sharing your recipe with us????????

Worst waffles I’ve ever made! Tasted like old eggs and looked green. I pity the people who have tasted this recipe and enjoyed it. It was funny to see my family’s faces as they ate the waffles though. Thanks for the good laugh!

I’m so sorry to hear that! Paleo waffles tend to be mostly egg which is why they taste like egg. Not sure why they turned out green though. That’s weird.

I made these. The taste is fine but they flattened out when I put the lid on my waffle iron. I don’t know if its something I did or just the coconut flour.

Love these waffles! Had a craving and made these. I subbed canned pumpkin for milk and it came out great. This is a good recipe, I will be sharing and saving it, even though I’m not paleo, I do like locarb.

I’ve noticed from many other recipes that coconut flour needs to sit for several minutes to absorb moisture from wet ingredients. In your Step #2, do you wait until the coconut flour has absorbed the moisture, or is this not necessary?

I’ve never had to wait but I do live in the desert so if you live in a more humid area, you might need to. Mine always absorbs instantly.

There is no way I could do Paleo. I can’t even really figure out how to make one Paleo meal let alone eat that way all the time. I need cheese in my life. Unfortunately, my stomach has decided it doesn’t like wheat anymore, so I am gluten-free now. These waffles are perfect! Thank you!

I’ve tried Paleo so many times I’ve lost count :) It’s hard to do with kids! These waffles look amazing though – super thick just how I love them! Such pretty pics with the strawberries on top. Hope you are having a great weekend Amanda!
